It’s late.
I just got in from work.
I’ve yet to walk my dog.
I’m hot. I’m tired. I’m horny.
I went tomato crazy at a local market because the goods looked ripe and ready for the taking. However, I was taking the tomatoes nowhere, none too quickly, which forced them to sit on my table, in a bowl, and into a quasi over ripened state.
I’m ready to take those tomatoes to a safe place now, my tummy.
Summer Sauce
3 T. olive oil
4 cloves of garlic
4 plum tomatoes
2 Vine tomatoes
1 pint of cherry tomatoes
4 leaves of basil
Kosher salt
-Place olive oil, garlic and red pepper flakes in a large pan - on low to medium heat
-Cook until fragrant
-Add tomatoes, salt and basil
-Cook down, 15 minutes or so
-Add a tablespoon or two of water if your sauce is looking a little dry
*Serve this light late night masterpiece with any type of pasta and top with parmigiano
